Ingredients
1 (26-ounce) jars hearts of palm, rinsed, patted dry and halved1 (14-ounce) can of chickpeas, rinsed and patted dry1/2 cup red bell pepper, finely diced1/2 cup yellow onion, finely diced3/4 cup vegan mayonnaise2 tablespoons stone ground or Dijon mustard2 tablespoons fresh dill or Italian flat leaf parsley, finely chopped1/2 cup ground flaxseed1 1/2 cup vegan panko or regular, unseasoned breadcrumbs (checklabel)2 1/2 tablespoons Old Bay Seasoning (or to taste)2 teaspoons garlic powder1 1/2 teaspoon black pepper1/4 teaspoon salt (optional-Old Bay Seasoning has sodium)2 tablespoons grapeseed or other neutral oil
